This week I'm going of get lots of baking done {again} we also have Awana's and Christmas Parties to go to,  not to mantion that my husband will be working late most of the week and helping family move on his days off! I'll mostly be cooking for the kids...

Good Morning! it's Weigh in Wednesday!I have to be honest I haven't weighed my self in about a month now until last night and I was surprised that it was the same, not that I thought I had gained but I haven't been 'as strict' as I was. Anyhow here is my tip today... SHOES!!!! they make such a difference in your workouts and have such an impact on you body. I bought a pair of ASICS on Jan.1st 2013 and didn't workout much in the beginning of the year {lack of effort on my part} but when I started running and then doing insanity they started to fall apart and fast. My friend told me to contact ASCIS and see about a warranty... I did and now I am sending them in to get a new pair {I'll update you when I get them!} so last night I had to go get some new ones for the time that I wouldn't have them... these are the ones I got! I tried them last night and I told my husband that I swear I'm jumping higher! {insanity}

It's COLD!!! We had a cold front hit and it brought us some freezing rain, and got us out of school on Friday! WOO HOO! it's supposed to warm up this week but today is still cold! This is what we are doing for supper this week.


Monday- Roast potatoes and carotts
Tuesday- Doritos chicken casserole
Wednesday- Awana's
Thursday- Fish sticks/ baked cod
Friday- Chicken speghetti, salad and french bread

Weigh in Wednesday {linky}




Good morning friends! It's Weigh In Wednesday again! I skipped last week because I know everyone was getting ready for thanksgiving and WAS NOT thinking about weight {I wasn't} or healthy options although I did workout! Anyhow, on to this week... What are y'all doing to stay healthy or "on track" I have been following Shaun T {insanity trainer} and he has a holiday challenge going on that I wanted to share, it's an 'extra' minute of workout... it's for anyone!!!!

and because I'm such a food lover.... Monica over at The Yummy Life healthified a Texas sheet cake... OMG it looks SO yummy!

  • FOR CAKE:
  • 1 cup water
  • 1/2 cup butter
  • 1/3 cup unsweetened cocoa powder
  • 2 eggs
  • 3/4 cup Greek yogurt (low fat or full fat)
  • 1/2 cup unsweetened applesauce
  • 2 cups whole wheat pastry flour (or 1 cup regular whole wheat flour plus 1 cup white flour)
  • 1-1/2 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • FOR FROSTING:
  • 1/2 cup butter
  • 1/3 cup unsweetened cocoa powder
  • 6 tablespoons milk (whole or 2%)
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 1 cup chopped pecans or walnuts (optional)


Directions
Preheat oven to 350 degrees.
1. Add the butter, water, and cocoa to a medium bowl and microwave until it boils, approx. 2 to 2-1/2 minutes. Whisk until smooth and set aside to cool.
2. In another medium bowl, whisk the eggs; then add the yogurt and applesauce and whisk until combined. Set aside.
3. In a separate large bowl, whisk together the flour, sugar, baking soda, and salt. Add the warm chocolate mixture; stir to combine completely. Add the yogurt mixture; stir again until completely combined.
4. Pour batter into one ungreased 13x18 baking sheet (jelly roll pan) or two 13x9 baking sheets.
5. Bake for 15-20 minutes until toothpick inserted in center comes out clean.
6. Frost right away while cake is still hot. Pour on frosting and gently spread to edges with a spatula.
7. Let frosted cake cool completely, cover, and store in refrigerator.

FROSTING (make this while cake bakes):
Melt butter in medium bowl in microwave (30-40 seconds). Whisk cocoa into melted butter until smooth. Whisk in milk and vanilla until well combined, and then whisk in powdered sugar until smooth. Stir in chopped nuts, if desired. Note: If frosting thickens too much to pour over cake, zap for 20-30 seconds in microwave to warm and thin it. Stir and frost cake.

Keep cake refrigerated. Frosted cake is freezable; thaw uncovered for 1 hour before serving.

Nutritional Information (per serving when cut into 40 2x3" pieces). 160 calories, 7.2g fat, 23.3g carbs, 1.4g fiber, 17.7g sugar, 1.8g protein; Weight Watchers PointPlus: 4

Menu plan monday {Dec. 2nd}


IT'S DECEMBER! I'm so excited! We have our tree up, our lights on the house and already got our family pictures done for Christmas cards! Did anyone go Black Friday shopping? We did! Got just about everything I wanted to get! I hope everyone had a great thanksgiving! Have a great week!

I made it... Goulash!!!

Okay so my husbands aunt makes goulash. He tried to make it once... It wasn't very good.  shh... Don't tell him that I said that! So, tonight I decided to make it... And change it up a little! 

Goulash my way!

1 pound hamburger
1/2  onion
1 can rotel
1 can diced tomatoes
1 can tomato sauce
Elbow noodles

This is where it gets changed... I didn't measure so this is all as much or as little as you want! 


Crushed red peppers
Salt
pepper
Garlic

Here's how to do it...

Brown your hamburger and onion, add  crushed red pepper, salt, pepper and garlic. 

In a big pot start the elbow noodles

Drain hamburger, add rotel, add diced tomato, and let simmer.

Drain elbow noodles and return to pot

Put hamburger mixture in with the noodles, and add the can of tomato sauce

Give it a good stir, let sit for a few minutes and dinner is done!

After my rut that I was in last week I decided that Monday was a new week and I was going to 'kill it'... I did weights Monday night and I'm still sore! LOL Did abs yesterday and today it's legs! IT'S WEDNESDAY!!! Half way into the week.... I have an admission to make... THIS week has been SO hard for me! Eating good has been a struggle, working out has been a struggle... and I haven't had ANY motivation!!! I feel like a failure and like I'm gonna gain it all back (like today) I know that we all have bad days, that I'm not a failure and that 'this too shall pass'

    GOOD MORNING!  It's our next edition of Weigh in Wednesday... and Because I got such a HUGE ( insert sarcasm here) response I'm gonna keep it up. Hope everyone is having a great week!

    This weeks yummy is....
    Thank you Six sister's stuff! It looks so yummy... and I have a small (HUGE) addiction to chocolate!

    Frozen Bananas


    -3 large bananas
    -1/2 cup chocolate chips (either semi-sweet or milk chocolate)
    -1/2 cup peanut butter (I used creamy, but crunchy would work too! It would just have chunks in it . . . obviously)
    -Toppings (optional)- I used crushed peanuts and coconut . . . but anything goes!
    1. Set out a pan (I used a small cookie sheet) with a piece of wax paper on it.
    2. Cut up the bananas into good-sized chunks. Each banana should give you around 6-8 pieces.
    3. Heat the peanut butter and chocolate chips in the microwave on high for about a minute. Then stir until smooth.
    4. Dip the banana pieces in the chocolate-peanut butter mixture. Lay them out leaving some space between them on the parchment/wax paper. Then when you've "covered" them all, use the remaining mixture to spoon over the tops (for even more chocolate-y goodness).
    5. Top with toppings (if you want them!). Transfer to the freezer for about an hour until hardened.
    6. You can enjoy them like this (but they really aren't frozen yet -- and when they're frozen, the banana tastes like vanilla ice cream) . . . I suggest then covering with some plastic wrap (or in a Tupperware/Rubbermaid container) and let freeze overnight.

    Weigh in Wednesday! {Linky}


    GOOD MORNING! and WELCOME to WEIGH IN WEDNESDAY!!!



    I'm wanting to start a weigh in Wednesday... Y'all can join in...NO, I don't want to know your weight...I'm want to hel encourage and have others encourage us all to be healthy! I would like to have recipes and workouts that everyone is doing!
    I have 'pinned' a bunch of healthy options and lots of workouts on my pinterest y'all can follow Please SHARE!

    This weeks Yummy Recipe is... Chicken Broccoli Casserole


    Chicken Broccoli CasseroleApproximately 3 cups of shredded chicken
    16 oz bag of frozen broccoli (cooked)
    1 container of cream of mushroom soup*
    1 cup of shredded cheddar cheese
    Garlic powder and pepper to taste

    Preheat oven to 350 degrees. Mix all ingredients together in a bowl, pour into a 9x9 baking dish and cook for 25 minutes. That's it! Easy peasy :)

    I'm sure as many of you know that I'm an ADVOCARE Distributor and LOVE the products, I have started a 24 day challange (day 6) and on top of doing Insanity and running I finally feel like I'm seeing a change! I started working out and eating good Jan. 2012 and lost 25 lbs and then thought 'oh, I got this' and slowed down on working out and starting eating what I wanted... I gained almost 10 lbs back and got into that funk of it's not going to change, why do anything... On Sept. 1st I rededicated myself into changing. Strict diet plan (yes, I still have my days where I eat bad) and started Insvanity... Y'all so far I've lost 13 lbs. I'm trying not to have a set 'goal' because I obsess over it but I still have about 10 to go! We did a Color up 5K last weekend (alomst 2 weeks ago) that was so much fun I just had to post pictures and kind of a mid-way picture!

    Hate the color pink and a friends blasted me with it! YUCK! lol

    Much needed blog post!

    Holy crow!  It's been FAR too Long!!!! We had such a busy summer! Time to catch y'all up!!! I'll give y'all more details and lots of pics later!

    Back in JUNE...

    On June 13th I entered a 5K fun run in Austin, where my husbands cousin lives. We were all set to hit the road (3 hour drive) when all the sudden our car went crazy!  We hopped in my mother in laws car and hit the road... got to the run just in time and shaved 5 minutes off my time!

    Time to look for a new car!


    On June 28th, we again traveled to Junction for our family reunion (in our borrowed car) and had so much fun floating the river, swimming and catching up with our family.

    JULY

    Back to Austin... We live in a small(er) town and with having to look for a new car because ours we no longer reliable, we frove back to Austin to look for one. Found one that I loved but the husband wasn't sold so we came home with nothing.

    Our visitors... My good friend Danielle had just gotten out of the air force and wanted to come visit so on July 15th she flew in for 2 weeks, that is when we traveled once again to San Antonio, and that is where we found our 2010 Chrysler town and country, fully loaded and for a great deal!!! While she was here he had some great times catching up, getting our nails done and going camping!

    AUGUST

    This summer was full of alot of travel, in August we went to DisneyWorld. We drove there on the 5th and spent 4 days in the parks only to drive home that Sunday... we were exhausted!!!!

    New job! While in Disney I got a call from the superintendent from a small town close to ours asking me to come work there, after some thought and the fact the Eli was starting Pre-K out there I accepted the job.

    Mom came to visit, We got to have some "girl time" and do some School shopping and she also got to see my new school that I'm working at. Her visit was way to short.

    We started School on August 25th, so it was back to the ol grind... Both kids started Upward cheer and flag football and love it but practice and games we are BUSY bees!

    SEPTEMBER


    Getting into the swing of things, We have started back to AWANA'S (church club for kiddos) so now we are CRAZY busy!

    On the 20th my neightbor and some friends traveled (again) to Dallas for the Women of Faith confrence, it was amazing!


    OCTOBER

    Next weekend I will be running in our %k COLOR RUN and I am so excited for it!

    We are finally starting to calm down just before the holidays, I feel like I'm still playing catch up!

    Well, I really have NO excuse as to why I haven't posted in FOREVER. I've been really bad about menu planning and making dinner too! It's our 1st week of summer break, We have VBS this week (I'm teaching) and then I'm going to be driving for summer school (it's only 3 weeks).

    We bought a house!

    So this is the reason I haven't posted in a little bit...OK, a long time and I'm sure EVERYONE (no one) noticed! LOL Anyhow, this is our 1st home that we have bought. No more renting and paying someone elses mortgage!




     We closed on 3/26 and started cleaning that day (the house was left disgusting) we moved in on Good Friday (it really was a great Friday, for us) so, almost a month now and I still need to hang pictures and get the kids rooms decorated, but other then that we are getting all settled in OUR house!
