It's been super busy around here with the end of the school year coming to an end and traveling to San Antonio! This is what we have done this week for dinner

Monday- coming home from San Antonio, grab something quick
Tuesday- Going away party for friends
Wednesday- Sweet and sour chicken
Thursday- Meatloaf, mashed tators
Friday- chicken something
Saturday- Birthday party dinner

Italian creme cake
I made this cake for Mothers day (not my 1st time) but my 1st time blogging the recipe...
Ingredients
Ingredients
- 1 cup butter
- 5 egg yolks
- 1 teaspoon baking soda
- 2 cups all-purpose flour
- 5 egg whites
- 2 cups sugar
- 1 1/2 cups buttermilk
- 1 cup chopped walnuts
- 1 cup flaked coconut
- 1 (8 ounce) package cream cheese
- 1/2 cup butter
- 3 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup chopped walnuts (sub. pecans, roasted almonds)
Here's what you do
In your mixer, Cream together 1 cup butter or margarine, seperate 5 eggs (put whites off to the side) add in egg yolks, and 2 cups sugar. Alternately mix in 2 cups flour and 1 1/2 cups buttermilk. Add in 1 tsp. baking soda. Mix in 1 cup walnuts and 1 cup coconut.
Beat egg whites, and slowly mix into batter. Pour batter into three greased and floured 9 inch round cake pans.
Bake for 20 to 25 minutes in a preheated 350 degrees F (175 degrees C) oven. (Check with toothpick)
For the frosting
in your mixer blend together 1 Pakage cream cheese, 1/2 cup butter or margarine, powdered sugar, and 1 tsp. vanilla extract. Spread onto cooled cake.
you can garnish any way toud like (ex: add walnuts and/or coconut into the frosting or add to top or sides)
if you feel like its alittle watery, add more powdered sugar

Taco Salad bowl!
Ok, so I didn't follow our meal plan for yesterday but it was a good thing... we had taco left overs in the fridge and I wasn't feeling like soft tacos SO... I made a taco salad bowl, in the oven! it was SOO good!
Heat the oven to 450
Take a tortilla and put alittle olive oil on it and put in a oven safe bowl ( at first I had the bowl flipped ofer and the tortilla on it)
bake for 10-15 minutes.
remove and fill.. (we had beans, taco meat, rice, cheese and lettuce)
Easy dinner and my husband was jelous! he said next time we have tacos, he wants one! LOL
