Menu plan Monday

Well last week didn't go exactly as planned and this week is going to be kind of busy...
This is what we are having

Monday- fish sticks/ salmon
Tuesday- Chicken Flautas
Wednesday- garlic pizza bread
Thursday- something quick
Friday- sloppy joes
Saturday- broccoli potato soup
Sunday- beans and cornbread

Menu plan Monday

I've been really bad with menu planning, which has resulted in lot's of stress as to what's for dinner an hour before time to eat... so I'm planning it out now. This is what we have planned this week!

Monday- grilled chicken and asparagus
Tuesday - pork chops and broccoli
Wednesday - leftovers
Thursday - game night/pizza
Friday - parents night out
Saturday - taco soup
Sunday - beans and cornbread

Cowboy cornbread casserole

It's been a long time, but I'm back!

Tonight we had an amazing dinner and I had to share.

It's super easy to make

1lb hamburger
1/2 onion
Taco seasoning
1 can rotel
1 can ranch style beans
1 can corn
Shredded cheese  (to taste)
2 packages of corn kits (prepared)

Here's what you do

Brown hamburger, add onions and taco seasoning. Add rotel, corn, and beans. Prepare cornbread set aside.
In a casserole dish add meat mixture, layer cheese and add cornbread to top.
Bake at 425 for about 15 minutes until cornbread is golden brown.
Eat! And enjoy!

Menu plans {3/24}




It's going to be a short week for us, because we are going camping this weekend! I only really have to cook Monday Tuesday and Thursday! Woo hoo! Lol so this is what we are planning...


Monday- ribs and green beans 
Tuesday- Southwest chicken and brown rice
Wednesday- Church night/kids eat at church
Thursday-spaghetti 
Friday-camping/sandwiches
Saturday-camping 
Sunday- coming home/ something quick

Menu plans {Spring break }



So I don't know if anyone noticed, but I disappeared again... I was really getting into Paleo lifestyle and trying to treat my hypothyroidism! I am back now... You will still see Paleo recipes, but I will try to mix in a little bit of everything else too. This week is our spring break, so things have been a little crazy trying to keep the kids entertained! This is what we are having for supper...

Monday: grilled hamburgers, coleslaw & chips 
Tuesday:  tacos and Spanish rice Wednesday: barbecue chicken, potatoes & Mac & cheese
Thursday: Porkchops, Green beans & rice
Friday: chili 
Saturday: chicken and dumplings
Sunday: beans and cornbread

Rant!


I just tried for my third attempt to make Paleo pancakes... Fail!!!! They didn't taste good, and they didn't look good. Every part of me wants to go eat everything bad for me! 

I apologize for the rant but I am human and a woman, I started this whole Paleo diet because of my thyroid. I have struggled for years to lose weight and was told Paleo was the way to not only lose weight but get my thyroid function on track. 

I came across a list of non-friendly thyroid foods (some of which I already knew) but did want to share!




Veggies

•Broccoli
•Brussels sprouts
•Cabbage
•Cauliflower
•Kale
•kohlrabi 
•Mustard greens 
•rutabaga
•turnips
•Radishes
•Spinach

These steal your iodine from your thyroid,  cooking them does help

Fruits 

•Peaches
•Strawberrie

And more

•millet 
•Peanuts
•Soybeans and soy products, including tofu
•linseed
•Pinenuts


Paleo Hamburger hash

Oh my goodness,  I could not think of anything to make for dinner tonight didn't look at my meal plan and was out most of the day... Looked on Pinterest found a couple ideas and then made up my own thing! This isn't completely Paleo especially if you add cheese to it! (I did not)

1lb hamburger/ ground turkey 
1 can rotel
1/2  onion
Taco seasoning
4 potatoes 


Brown one pound of hamburger/turkey, add taco seasoning,  add in onions and a can of rotel. In a separate pan diced potatoes and semi pan fry your potatoes, only used a splash of oil, add both pans together and let simmer. 

Top with hot sauce and guacamole, boys had cheese on top

The boys had ranch style beans along side! 

It was a quick filling meal! Yum!
