Chocolate chip scones

I'm taking a break from the whole30, with Thanksgiving and all! Lol so this morning I got up and decided to make my kids some yummy scones! Looked at a few recipes on Pinterest... Saw a lot that needed heavy cream or butter milk (I had neither) I found one that used Bisquick I tweaked it a little my way and came up with these! 

Ingredients:

2 cups Bisquick
1 egg
1/2 Cup milk
1 teaspoon vanilla
3 tablespoons sugar
1/2 cup semi sweet chocolate chips
1/2 Cup mini semi sweet chocolate chips


How to: 
Preheat oven to 425°
In a mixer put in your Bisquick, egg, milk, vanilla, sugar, and chocolate chips. Turn on to low speed, I added a splash more milk as it was too crumbly... As dove formed I laid out some flower on the counter and dumped the dough. I rolled it a little on the flower so that I could touch it without sticking to it, flattened it out to about an inch thick in a circle and then cut like a pizza. Put on cookie sheet and into the oven for about 10 to 12 minutes... So good! The kids absolutely loved them!

Almost 2 weeks!

Tomorrow makes two weeks of the whole 30! It's been a little harder feeding the family and not being able to have what they are having all the time... But the other day when they had chicken and rice I just pulled some chicken to the side and grilled up a zucchini  instead! Last night when we had friends over I made stew and just didn't add the corn, and stayed clear of the cornbread! Tonight we had these amazing shish kebabs!!!!

Chicken, cherry tomatoes, onion, zucchini and red bell pepper... Yum!!!


I was going to put them on the barbecue but the propane went out so they had to go in the oven... They were still delicious! 



And the best part of it all is I am down 6 pounds!

Whole30 days 2 & 3

I'm loving this way of eating! It's simple and filling, I've cut out most of my snacking! 

Day 2 

Breakfast- I had zeal and a banana 

Lunch- I had my amazing salad with a salmon fillet 



Dinner- taco salad with hamburger and guacamole

I did snack on some nuts after workout 


Day 3

I woke up with a migraine (haven't had one of those in almost 2 years!) 

Breakfast- I made some scrabbled eggs with leftover hamburger and  guacamole

Lunch- I had roasted sweet potatoes with cinnamon and a chicken breast 

Dinner- I made my salad again with the salmon fillet 

My snack today was an apple with almond butter... Yum!

Whole30 challenge

It's that day!!!! The dreaded Monday!!! This week will go by super fast though because Halloween is on Friday!!!

I am starting the whole30 Challenge today, and super excited about it! 



I'll probably be posting a lot of pictures just so I can remember what I did and when...


Of course I started with my zeal this morning! 

I had an Apple post workout (Half stadium stairs and half body pump) 

For lunch I had this yummy salad! Salmon fillet and power greens with a drizzle of lemon juice and olive oil




Dinner was so yummy! Grilled chicken,grilled zucchini and yellow squash and  cumber and tomato salad! 


For snacks I had a banana and a seed and nut trail mix. I would say that today has been a pretty successful day!

We are off today so I hit the gym ran to the grocery store and got to do some cleaning! It's starting to get cooler so now I can make more crockpot meals... This is what we are having this week...

Monday- grilled chicken, twice baked potatoes and steamed asparagus
Tuesday- chicken quesadillas
Wednesday- breakfast for dinner
Thursday- sloppy Joe's, and french fries
Friday- girls night out
Saturday- homemade chicken strips, French fries and gravy

Since we have gotten back from Jamaica I have yet to get back on track with nutrition and exercise. as of tomorrow I am starting over, AGAIN!!!! Missing, but back home...

Our Charlie bug got out last Sunday (total indoor cat) because our kids and nephews kept going in and out...

I walked the neighborhood, went to the pound, registered him on help me get home, and posted signs everywhere...

Early Friday morning we had a thunderstorm that woke me up and of course I went to look in the backyard to see if Charlie was back, again in the front yard and went back to sleep... When it was time to get up at 5:30 AM I went and checked the back door, the front door, and opened up the garage door. Our Charlie was back!!!!

Back to school

We started back to school which means back to work for me and back to routines... Our girl started 4th grade and the boy started kindergarten...

I was doing so good and even posted after our Jamaica trip.... But then my mom was here and school started... Anyhow, here are a few pictures of what we've been doing and what's been going on... 


Mom came to visit, she and my stepdad only stayed 6 days.... She brought us lots of Seahawks gear and we got to to school shopping! 

I stole her cute hoodie... She wouldn't let me keep it tho! Lol

Sorry for my absenteeism... I just spent a week in Jamaica! My husband and I celebrated our 10 year anniversary and renewed our vows! Here are a few pictures... Yes I'm kind of bragging! Lol

Menu plan Monday

It's VBS this week!  So from 6 PM to 9 PM I will be kid-less.... The church feeds them dinner so it might be kind of fast meals this week for me and the hubs! We are also getting ready to leave for our 10 year anniversary and Vow renewal in Jamaica.... We leave on Saturday for Dallas-Fort Worth!

Sunday- chicken broccoli casserole

Tuesday- stuffed bell peppers
Wednesday- zucchini pizza
Thursday- cheesy bacon chicken

Breakfast scramble


OMG, I made the best breakfast thus morning, turkey breakfast scramble...

1 jenny o  frozen turkey burger
2 eggs
Mozzarella cheese
I Added a little bit of hot sauce


It was so good!!!

Low-carb chicken broccoli casserole

I think I am on a roll today.... I was looking for low-carb recipes on Pinterest, and after looking at many recipes I couldn't find one that I absolutely loved, so I kind of just mixed up my own thing! 

I cut/cubed up 2 chicken breast and tossed them in a skillet with alittle bit of Olive oil and grilled until almost cooked. Added garlic, and a chicken bullion cube. I added in half (4oz) cream cheese. And 1/2 cup of milk (almond milk). I mixed that all together and added in frozen broccoli, transferred all of that into a greased casserole dish. Cover and put in the oven (375) for about 30 minutes. Finally uncover, and cover with shredded mozzarella cheese, leave uncovered until cheese is bubbly and brown... So yummy! 

Ingredients:

2 chicken breast
Olive oil 
Garlic to taste
1 chicken bullion cube
1/2 block (4oz) cream cheese 
1/2 cup milk (almond milk) 
Frozen broccoli (small bag) 
Mozzarella cheese (to top)

Oh my gosh! I left the week get away from me and just forgot to post my Monday meal plan.... And come to think of it I'm not even sure I remember what we have done a week! Lol

Monday- season chicken, sweet orange peppers
Tuesday- tacos
Wednesday- tuna boats
Thursday- pork chops,  broccoli salad
Friday- parents night out!
Saturday- ribs, salad
Sunday- grilled fish


Keep in mind I am low carbing until we go to Jamaica in 10 days!!!!!

Shrimp scampi

Hi! Just wanted to share... Because I'm low carbing (Atkins) and love shrimp. 

I saw a pin on Pinterest, I didn't follow it exactly (didn't really measure anything)  but it turned out so good!!! 



This is what I did... Put a little bit of oil in your pan, get it hot and add shrimp.
Move shrimp around until shrimp turn pink, remove from heat and put in a bowl. 
In the same pan add about a half cup of butter, 2 tablespoons of minced garlic, 1 teaspoon of Italian seasoning and 1 teaspoon of parsley, cut and squeeze 1 half of a lemon, let simmer (but do not let the  garlic turn brown) add back in the shrimp and let sit in the butter for about 5 minutes. Serve and enjoy!!! 


Ingredients:

1 pound of shrimp (peeled and de-vained)
Olive oil
2 tablespoon of garlic
1 teaspoon of parsley
1 teaspoon of Italian seasoning
1/2 lemon (squeezed)
1/2 cup of butter

Summer camp!

First time in church camp, she was a little nervous to go because she's never been away from home for more then a sleepover! 


After a week at camp, she sure was tired and her kitty sure did miss her!

Just because we are out of school does not mean they don't have work to do!

Weigh in Wednesday! {3.5.14}

Weigh in Wednesday {2/26/14}




Ok, so I'm a day late but for good reason... My Eli was sick :( he had it coming out both ends...TMI sorry! Anyhow, back to the weigh in... As many of you know I do advocare and have for 2 years now... A friend recently introduced me to this thing called ZEAL and I was like 'no thanks, I do advocare' she said that I really needed to try it and told me that she has lost 27lbs...so I took the sample thinking maybe she'll just leave me alone now... put it on my fridge and started checking ZEAL out {you know research... I'm not putting anything in my body that I don't know about} fast forward a week and she asks me to come over on Friday {2/21/14}... I had just left the gym and went over, she had the protein shake waiting for me. OH EM GEE!!! It was so good, it's made by Bluebell {as in the ice cream co.} She started telling me about the company and how it all works... I went home and talked to my husband, who was not wanting to leave advocare in the slightest. SO, in a weeks time {almost} just drinking the Wellness and a few protein shakes, I've lost almost 7 lbs!!! Weight in Wednesday {2/12/14}



Good morning! Welcome to weigh in Wednesday! I have made it back on track after a bad eating weekend! I restarted on Monday and am back on my ADVOCARE eating schedule and taking my CATALYST before my workouts! Yesterday i started P90X {not my favorite} and I'm a little sore today!
